Hello from Easthouses Cookie Company!

I’m Linda, the founder and head baker at Easthouses Cookie Company.

When I was 10 years old I made my first cook book which was given to my mom as a gift. It was full of baking recipes that I had copied from magazines and put into a doutang (it seems like 10 year olds are not too concerned about plagiarism). This started a passion about baking which has continued throughout my life. My favourite thing to bake has always been cookies, with most of my time trying to bake the perfect chocolate chip cookie. Many (many) years later I have now figured out the ideal amount of butter, sugar, flour, vanilla and a few other secret ingredients to end up with the perfect thick and chewy chocolate chip cookie.

BUT WHERE DOES THE NAME COME FROM??

This is a question I get asked a lot…
Easthouses is a small community about 30 minutes outside of Edinburgh, Scotland. Blink and you may miss it. I was born in Scotland and raised in Canada but my sister, brother and I would return to Scotland most summers to stay with my grandparents who lived in Easthouses. My Granny was always busy doing something - volunteering, knitting, singing, making us laugh (usually this included a whoppie cushion or some other practical joke) and baking. She would make Scottish tablet, scones and biscuits without a recipe book and I would watch her effortlessly create these delicious treats.

The name Easthouses Cookie Company is in homage to this remarkable woman and all my family still living there. It’s a place which I will always be connected to, despite the distance or time away from it.
